Introduction

A great way to sneak in some vegetables! A great way to sneak in some vegetables!
Number of Servings: 12

Ingredients

    Pork Tenderloin or boneless pork
    1 pkg. Wide Egg Noodles
    1 pkg. Matchstick Carrots
    1 head of Chinese Cabbage
    1/2 onion
    2 green onions (chopped)
    1 small can mushrooms (optional)
    1 tbsp. Olive Oil

Directions

Boil noodles. While noodles are cooking cut pork into thin, long strips. Chop onion into small pieces and cut green onion into small rounds. Set aside. Heat olive oil in large pot. Add onion and cook until translucent. Add pork to the onion and cook until pork is no longer pink. Add a tbsp. or so of soy sauce to flavor pork. Add green onion and carrots. Stir well mixing all ingredients together. Cut cabbage into small pieces and add to pork mixture. Sitr will and cover to sweat down cabbage. Add mushrooms. Drain noodles and add to pork mixture and stir well. Add soy sauce to taste.
You can add a variety of vegetable to make this your own!

    very good but instead of wide noodles I used angel hair pasta and bok chow instead of the cabbage and was very good. - 1/17/08
