Introduction

Ingredients

    About 8oz thinly sliced lean pork
    1 can of chick peas
    1 bag (12oz) of steam in the bag broccoli
    Another 12oz bag of other steam in the bag veggies (I use Giant Eagle Harvest Blend)
    1/3 can Taste of Thai Lite Coconut Milk
    3 tsp Taste of Thai Red Curry Paste
    6 tsp siracha chili sauce
    1/2 tbsp curry powder

Tips

Serve this curry with brown rice and a drizzle of thai peanut sauce!


Directions

-One at a time, place veggie bags in the microwave according to their directions.
-While veggies are steaming, slice pork into thin strips or bite-sized pieces.
-mist pan with olive oil spray and cook pork over medium heat until lightly browned
-add coconut milk, curry paste, siracha, and cumin.
-stir until sauce is well mixed
-add chick peas and veggies
-stir to mix and cook continue to cook over med-low heat until heated through and pork is done.
