Introduction
This can be 1 serving, but I give my 2 year old a slice. NOTE: Add in or take out as you please with the ingredients. I only had regular Mexican cheese and Regular flour tortillas--there is 2 ways to cut more calories.ALSO, I had leftover cooked ground chuck that I just heated up with onions in saute pan. Ingredients

Soft taco size flour tortilla (sub in with whole wheat if desired)
1/4 cup lean ground meat
1/4 tsp taco seasoning
1 tbsp onion
1/4 c Mexican Shredded Four Cheese (try to find 2%) Recipe uses regular
1/4 c grape tomatoes or cherry(optional)
2 jarred jalapeƱos (optional)
shredded lettuce
1 tbsp mild/medium salsa
1tbsp light sour cream
Directions
Preheat oven to 400.
Cook or reheat lean ground meat--add in onion and taco seasoning and little water if needed. Drain over any excess fat.
Lay flour tortilla on cookie sheet or pizza pan. Cover tortilla with meat and then tomatoes and jalapenos and then cheese. Cook for 5-7 minutes.KEEP EYE ON IT! Cooks fast!
Remove and top with sour cream, salsa, and lettuce and any other toppings you enjoy.
