Introduction

Ingredients

    1 lb boneless, skinless chicken breasts, well rinsed
    1 qt low sodium chicken stock or broth
    1 med onion, chopped
    1 15-oz can cannellini beans (white kidney beans), with liquid
    1 16-oz can diced tomatoes, with liquid
    1 4 1/2-oz can chopped, peeled green chilies
    1 green bell pepper, diced
    1 Tbsp chili powder
    1 tsp minced garlic


Tips

For low sodium diets: Use unsalted canned beans and tomatoes. If unsalted beans aren't available, rinse beans and discard liquid from can. Add 1/2 cup water. Next time, I will try fire roasted tomatoes with jalapenos as we prefer something spicier.


Directions

Cut chicken into 1/2-inch cubes. Put chicken stock in a large pot; add chicken & onion. Simmer 20 mins.
Add remaining ingredients; simmer another 40 mins, stirring occasionally.

Serving Size: makes 6 cups, 1 serving = 1 cup
