Introduction

I was craving icing so I decide to experiment -- here is the yummy result! I was craving icing so I decide to experiment -- here is the yummy result!

Ingredients

    This has about 4 carbs for the entire batch. For me, this makes about three servings, about 3 T. each. You could certainly decrease the amount of calories by using less. (By Tablespoon, it's about 60 calories plus .5 carb)

    You need:
    1/2 cup of heavy whipping cream
    1 T of unsalted butter
    1/2 t. vanilla extract
    5 drops of liquid stevia drops, vanilla

    For the liquid stevia, I used Whole Foods brand, which is a touch sweeter than SweetLeaf. You might want to start off with three drops, taste, then add more as needed.

Tips


Experiment with different extracts and liquid stevia flavors! I plan on trying apricot stevia next... yum!

I served my icing on a One Minute Muffin (made with 3 T. flaxmeal and 1 T. coconut flour). I cut the muffin into three, hence the extra icing needs.


Directions


Mix all of the ingredients together on low speed. First, your mixture will be foamy, like whipped cream, but if you keep the machine running, you will end up with more of an icing consistency. I cut my butter into four chunks before adding, but you could also cream the butter first. (I would have, but I had already added the cream before I thought to add the butter!)
