Introduction

Ingredients

    1 Cup 1% milk or milk of choice
    4 eggs
    1TBSP (3 tsp) sugar
    dash/pinch of salt
    1 cup White Whole Wheat (This is a whole grain flour)
    Cooking spray

Tips

Pan need to be hot and greased with cooking spray.
-Use as thin a spatula as you can to flip crepes.
-If having difficulty flipping crepes, you can just cook on one side for the 1 1/2 minutes.
- You can fill sweet or savory.
-Can be refrigerated or frozen for future use
-I find White Whole Wheat is a good substitute for White flour in most recipes without effecting the final product significantly.


Directions

-Place all ingredients except cooking spray in Blender.
-Blend approx. 30 - 45 seconds until well blended.
-Heat 9 to 10 Inch non-stick saute pan until hot, spraying generously (the first time) with cooking spray.
-scoop 1/4 cup batter into pan, swirling pan so batter thinly fills bottom of pan.
- as top starts to look dry - about 1 min- and bubbles appear, flip crepe
- cook 30 seconds more and remove from pan. Keep warm if eating immediately.
-additional crepes need only light spray of cooking spray.
