Quinoa is a nutritional powerhouse and the more we can bring it into our diet the better. Quinoa is a nutritional powerhouse and the more we can bring it into our diet the better.
Number of Servings: 6


    1 cup uncooked Quinoa
    2 cups Water
    2 cloves of Garlic, finely chopped
    2 Tbsp Red Wine Vinegar
    2 Tbsp Extra Virgin Olive Oil
    1/2 tsp Kosher Salt
    2 tsp Ground Cumin
    1 tsp Turmeric
    1/2 tsp Celery Seed
    1/2 tsp Fresh Ground Black Pepper
    1/2 cup, packed, Kale Leaves, trimmed of stems and finely chopped
    1/2 cup finely chopped Sweet Red Pepper


Do ahead of time: Combine Water and Quinoa in a saucepan and bring to a boil. Reduce heat and simmer for 15 minutes. The little tails will pop out of the grain when done. Refrigerate until cold.

Combine Extra Virgin Olive Oil, Red Wine Vinegar, Chopped Garlic and the spices in a bowl and whisk together. Let stand.

Finely chop Kale and Sweet Red Peppers.

Combine Quinoa, Dressing, Kale and Peppers in a bowl and mix well. Refrigerate to marry the flavors until ready to serve.

Serving Size: Makes 6 1/2 cup servings

  • This was a great summer night meal. I added diced red onion, diced tomato,chopped avocado, and cut back the olive oil to 1 Tbs. I soak the red onion in ice water before adding it in to take some of the bite out of it. I will make this again. - 8/23/12
