Ingredients
-
-4 C Fiber One Complete Pancake mix, mix only
-3 C water, I used filtered
-1/8 C raisins, chopped
-1 1/2 C diced apples
-4 t ground cinnamon
Directions
---Mix the baking mix and the cinnamon well then in another bowl mix your apples, raisins and water and warm in the microwave for 1 min. Let sit while your skillet(s) are warming over med./high heat (375 deg. is what the box said). I use two skillets for faster cooking.
---Mix the liquid and powder together until mixed, it will be a bit thin. My skillets are larger and can fit 4 pancakes in them. I use a 1/4 C measuring cup almost full and scoop out the batter that way. When you see several bubbles on top, it's time to flip. They should be golden. My skillets don't require oil. They are called Circulon and are AMAZING. Very easy to clean, too. These take maybe 1 or so minutes on each side. You can serve with fruit on top, plain (not too sweet, though) or with some powdered sugar. **None of these are added in the nutrition**
---Makes 10 servings of 3 pancakes each.
---Enjoy!!!
