Introduction

Ingredients

    1 1/2 cups cooked black beans*
    1 shallot, about 2 tablespoons, quartered
    1/2 bunch cilantro, about 3/4 cup
    1 Serrano pepper, stem and seeds removed
    1 clove garlic
    1 teaspoon cumin seed
    2 limes, zested and juiced
    1/4 cup tomato sauce

    *Note: Warm beans will puree more easily. If you use canned beans, drain and rinse them until no bubbles appear in the water, then microwave for one minute and proceed with the recipe. 1 1/2 cup cooked beans=about 1 14.5-ounce can





Tips

Try this:
In a whole wheat wrap with broccoli slaw
On a rice cake
Slathered on an ear of grill corn
With baked tortilla chips or veggies


Directions

Place all ingredients in a food processor and puree until smooth. Cover and refrigerate.
Serve immediately or refrigerate for up to five days.

Serving Size: Makes four 1/2 cup servings

    Black beans are my favorite , so high in fiber too , I make this dip all the time , I eat it with veggies, tortillas , tostada , on crackers or just by itself . I made a pot of beans last week & had a different black bean recipe 5 days in a row & they were all delicious - 4/16/13

    Delish. I subbed red onion for the shallot. I also only had one lime and used about 1/4 cup of fresh tomatoes instead of tomato sauce. - 10/21/12

    Yummy with beans I had cooked in my pressure cooker. I used salsa instead of tomato sauce but I think a serrano would be great! - 5/9/12
