Ingredients

    2 cups Water
    Tomato Bouillon
    1/2 Sweet potato, cut into 1/2 inch cubes
    6 Baby Carrots cut into 1/2 inch pieces
    5 Parsley root, cut into 1/2 inch pieces
    1/4 cup onion chopped
    2 tsp Garlic
    1/4 tsp garlic salt
    1 Tbsp Basil
    1 tsp Red pepper flakes
    1-1/2 tsp Curry powder
    1 tsp Turmeric
    5 baby bella mushrooms, sliced
    1/2 cup fresh Spinach
    1/4 cup toasted slivered Almonds
    1 Tbsp toasted Sesame Seeds

Tips

Great with rice or couscous!


Directions

Put all ingredients in a large frying pan on high heat except mushrooms, spinach, almonds and sesame seeds, stirring often. When water has mostly cooked down add mushrooms. Turn heat down to medium and continue cooking for about 2 minutes, add spinach and continue stirring for 1 minute. Add almonds and sesame seeds and serve.
