Introduction

Number of Servings: 6

Ingredients

    6 Small/Med Red Potatos (about size of tennis ball)
    3 Boulion Cubes + 5 Cups of water
    or 5 cups of Stock
    1 cup chopped Carrots
    2 Medium/Lg Tomatos
    6oz Ricotta Cheese
    4oz Fat Free Sour Cream


    Chop Carrots and Potatos to be approx the same size.
    Half or quarter the tomatos it's easier to get the skin off.

    Use any flavor of Stock or Boulion Cubes. Beef work really well with this dish as well.

Directions

Combine all ingrediance except Sour Cream and Ricotta Cheese in large heavy bottom pot and bring to boil. Turn down to medium and let cook for 30 minutes or until potatos and carrots are tender. Drain into a large bowl because you will want to use some of the liquid. Add 1.5 cups of the liquid back into the potatos, and use potato smasher or large spoon to smash at least 3/4 fo the solids. Add more liquid as needed.

Once finished smashing, add Sour Cream and Ricotta. Should be the consistancy of a very thick creamy soup. (add more liquid if you need).
