Ingredients

    3 cups Snyder's of Hanover Mini Pretzels
    .5 cup Butter, unsalted - melted
    3 TB Stevia

    2 (large) 0.60 box of sugar free gelatin
    1 (20 oz) pkg Strawberries, frozen, unsweetened

    8 oz Neufchatel Cream Cheese - room tempurature
    16 oz Cool Whip Lite - thawed
    1 cup Stevia (zero Calorie sweetener)
    1/4 tsp vanilla extract


Tips

I also like to make this with double cream cheese filling.


Directions

Put pretzels into food processor and pulsate several times. Add melted butter and 3 TB Stevia and pulsate until blended and very coarse looking. Press into a 9x13 baking dish and bake at 400 degrees for 8-10 min. Let cool completely.

Bring 4 cups of water to a boil, melt gelatin in water...place FROZEN strawberries in a bowl and pour gelatin mixture over it. Mix, put in fridge until set to the consistency of egg whites.

While gelatin is setting up, place cream cheese in a mixing bowl and beat until smooth, add 1 c of Stevia and continuing beating until creamy. Fold (do not beat) in thawed cool whip.

When crust is cooled, place cream cheese mixture over the top and spread evenly. When gelatin is at the correct consistency, pour mixture over cream cheese filling and spread strawberries evenly.

Refrigerate for 2-5 hours until well set.

    Incredible!
    Seriously could not tell the difference between the real deal. Be patient with the jello as it takes awhile to get to the egg white consistency but it will. my favorite dessert now for the Holidays! - 11/23/18

    WARNING: Do NOT use the amount of Stevia this recipe calls for- stevia plant is about 300 times sweeter than regular sugar. For pretzel crust, only use pretzels and butter, you can add a little honey to it or agave syrup. For cream cheese filling, ONLY 1/2 teaspoon or one packet. - 5/30/16

    Incredible!
    Excellent to be sugar free...with 18 g of carbs it is a good alternative to the sugared version - that weighs in with over 40 grams. It also has half the calories and almost half the fat! - 3/2/12
