Ingredients

1 1/2 t. olive oil
1 t. ground cumin
1 1/4 c. sliced fresh mushrooms
1 c. Red Gold mild salsa
1 c. diced fresh tomatoes
1 1/2 c. canned tomatoes and juice ( small can)
1 1/2 c. frozen corn
12 oz cooked chicken breast meat -- cubed
6 c. water -- broth from cooking chicken and water
1 T Better than bouillon chicken base
Directions
1. Saute mushrooms in olive oil. Stir in cumin.
2. Add salsa and chicken -- cook 1-2 minutes.
3. Add tomatoes, corn, water/broth. Heat until warm through.
