Ingredients

Egg, fresh, 1 large
Granulated Sugar, 1/4 cup
Truvia, 1/4 cup
Canola Oil, 5 tbsp
Lemon Zest, 1/8 tsp
Old Fashioned Oatmeal- Plain 1/2 cup dry
Ground Flaxseed Meal, 1/4 cup
Soy Flour, 1 cup
Almond Meal 1/2 cup
Whole Grain Quinoa, 2 TBSP
Pecans, 1/3 cup chopped
Black Walnuts, 1/4 cup chopped
Salt 1/2 tsp
Baking Powder, 1 TBSP
Cinnamon, 1/2 tsp
Soy Milk Plain Light, 1/2 cup
Directions
Preheat oven to 375.
Mix egg, sugar and oil in a bowl.
Mix lemon zest, and rest of dry ingredients in a separate bowl.
Mix dry ingredients in to egg mixture to create a thick dough.
Next mix in Soymilk. Stir until you have a sticky dough.
Scoop a large tablespoon of dough and make 2X1 rectangles.
Bake 15 to 20 minutes on baking stone or lightly greased baking pan.
Serving Size: Makes 13, 2 inch X 1 inch scones (or so)
