A light refreshing salad! A light refreshing salad!
Number of Servings: 1


    1/4 cup of arugula
    1/2 cup of watermelon cubes
    2 tablespoons goat cheese crumbles
    3-4 very thin slices of red onion
    salt and pepper to taste
    1/2 a teaspoon of olive oil (good tasting, quality)
    1 tsp of balsamic vinegar ( I prefer a little bit more, adjust according to your tastes, I thought this was a good starting point)


Arrange arugula on the plate
Top with watermelon, goat cheese, and red onion. Season with salt and pepper. Drizzle with olive oil and balsamic vinegar. ENJOY!
