Introduction

Crazy easy soup to make! I only had red lentils on hand and used those even though they tend to get mushy. Crazy easy soup to make! I only had red lentils on hand and used those even though they tend to get mushy.
Number of Servings: 4

Ingredients

    6 cups low sodium chicken/vegetable broth
    1 cup lentils, washed
    1 cup diced tomatoes (canned)
    1 onion - diced
    1 clove garlic, chopped
    olive oil
    salt
    pepper
    bay leaf
    thyme (sprig or loose dried)*


Tips

*I used dried, loose thyme and put in a tea strainer and placed that in the saucepan. You probably can just sprinkle the dried into the broth as well.


Directions

In large saucepan, combine broth, lentils, tomatoes, bay leaf and thyme. Sprinkle w/salt & pepper. Bring to boil and reduce heat to low and simmer for 30 minutes.

Meanwhile heat oil in a skillet and cook onion until soft (4 min or so) and then add garlic and cook 1 additional minute. Turn off heat and set aside.

Once lentils are soft, remove bay leaf & thyme turn off heat and add onion mixture.

Ready to eat!
