Introduction
Even the kids love it! Quick and easy. I adapted this from a recipe full of cheese and fat. The parmesan adds plenty of cheese flavor. A sprinkle of Romano cheese gives an extra flavor, if desired. Ingredients

12 oz. box whole grain rotini (Healthy Harvest)
10 oz. frozen spinach, thawed
1 clove garlic
1 c. chopped onion
1/4 t. Italian seasoning
1 jar (3 c.) spaghetti sauce (Ragu Traditional)
1 c. parmesan cheese
Directions
Cook and drain rotini according to package instructions.
In a 10" non-stick skillet, on medium heat, add olive oil, onion, garlic, and Italian seasoning. Cook until onions are soft.
Add thawed spinach, cook until warmed thoroughly.
Add the spinach mixture, spaghetti sauce, and parmesan cheese to rotini.
Stir until all ingredients are distributed evenly.
Makes 6 1.5-cup servings.
