Ingredients

    16 ounces turkey, ground, 99% lean
    6 slices turkey bacon
    1 cup onions, finely diced
    1 cup old fashioned oats
    3/4 cup carrots, shredded
    2 large eggs, beaten
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2-1 teaspoon chipotle pepper powder (or the chili powder of your choice)
    2 tablespoons chili sauce
    2 teaspoons Dijon mustard

Directions

Preheat oven to 350°F.

Combine all ingredients except for the bacon in a large mixing bowl.

Spray baking pan with nonstick cooking spray. Place 4 slices of bacon ay bottom of pan. Drop meat mixture into pan. Tope with remaining bacon.

Bake 50 minutes or until internal temperature of 165°F is reached
