Ingredients
-
Green Peppers (bell peppers), 3 cup, strips
*Ragu Spaghetti Sauce (tomato sauce), 2 cup
*Turkey, Ground turkey, 93% lean, 16 oz
*Brown Rice, long grain, 2 cup (One bag of instant brown rice)
Cloves, ground, 3
Onions, raw, 1 cup, chopped
*Extra Virgin Olive Oil, 1 tbsp
*Parmesian cheese, 6 tsp
Tips
If you want to speed up the baking process, you can boil the bell peppers for 3 minutes each prior to baking. This cuts the bake time down to 15-20 minutes but I've found sometimes it makes the peppers a little TOO tender for my taste
Directions
Pre-cook brown rice, slice green bell peppers in half lengthwise not width wise.
Combine olive oil, onions and garlic cove and saute for about 4 minutes before adding 16 oz of ground turkey and cooking thoroughly.
Combine rice, ground turkey, onions, garlic and 1 cup of Ragu spaghetti sauce and mix thoroughly.
Place bell peppers in an oven safe pan and distribute the mixture evenly in each bell pepper.
Mix 1 cup of spaghetti sauce with 1 cup of water and pour over peppers.
sprinkle 1 tsp of parmesian cheese ontop of each stuffed pepper
Cook at 375 for 30-45 minutes. When the peppers are tender it is done.
Serving Size: six (half bell pepper) servings
