Corn Tortillas, 4 tortilla, medium (approx 6" dia)
Onions, raw, 1 large-diced
Zucchini, baby, 1 medium-diced
*Canola Oil, 1 tbsp
Cilantro, raw, 4 tbsp- chopped
Garlic, 4 cloves, pressed with garlic press
*Cumin ground, 1 tbsp
Chicken stock, home-prepared, 3 cup
*Tomatoes-Hunt’s Diced fire roasted, 4 cup
Bush's Pinto Beans, 2 cup
Roasting Chicken, light meat, 3.5 cup, chopped or diced
Salt, 1 tsp
Directions
1) Stack tortillas and cut into 1 inch pieces. Place tortillas into blender or food processor container. Cover and pulse until fine crumbs form; set aside
2) Dice onion and zucchini; set aside. Place oil and anion in pan; cook and stir over mdium heat 4-6 minutes or until onion is tender. Add cilantro, garlic pressed with garlic press and cumin; cook an additional 20-30 seconds or until fragrant. Stir in tortilla crumbs, stock, tomatoes and beans. Bring to a gentle simmer; reduce heat to medium-low and cook 15-20 minutes or until chili is thickened, stirring frequently and scraping bottome of pan with slotted spoon.
3) Stir in zucchini, chicken and salt. Cook 3-4 minutes or until zucchini is tener an dchicken is hot. Serve with toppings if desired.
