    1.5 cup cooked pinto beans
    1 lb. boneless skinless chicken breast
    1 tsp. oregano
    1 clove garlic
    dash pepper
    1 cube chicken boullion
    1 tsp. cumin
    chopped onion
    5 red dried chile ancho peppers


boil beans until tender, sautee garlic and onion, add chicken breast, season with the seasonings and cook until done. Add chicken to the beans, add water to soup as desired, boil red chile pepper until tender, blend to liquify and then add to beans and chicken. add cilantro and serve.

  • This soup tastes exactly like the soups served as appetizers in Mexican restaraunts. My family loved this! I added celery and carrots and omitted the chiles until I could test it. Might be too spicy for the kids. It was great! - 1/3/10
