Ingredients

    Grass Fed Ground Beef - 1 lb
    Organic Taco Seasoning - about 6 TBS (to taste)
    Onion (1 large)
    1 large Bell Pepper ( I use 1/2 orange, 1/2 yellow)
    Garlic to taste (about 2 tbs minced)
    Spring Mix or other salad greens (3 cups/serving)
    Sour Cream (about 3/4 cup per serving)
    Sharp Cheddar Cheese

Tips

I buy the taco seasoning in bulk and all the other items from my local organic good coop.


Directions

Heat a large frying pan. Add olive oil, than add chopped onion, garlic and bell pepper. Cook over high heat until onion is just starting to get tender. Remove to a bowl.

Cook ground beef until almost fully browned and add taco seasoning and water. Mix. Add back in the onion mixture and mix again. Turn heat to low.

In a LARGE serving bowl place about 3 cups of spring mix in bowl, shred cheese onto lettuce, put about 1/3 of the meat mix on top, and than top with sour cream. The sour cream and meat juices is the only dressing, so be generous with the sour cream.
