Ingredients

    2 c. rolled oats
    1/2 c. whole almonds, toasted and chopped
    1/2 c. sugar
    1 tsp baking powder
    2 tsp ground cinnamon
    1/2 tsp sea salt
    2 c. milk (skim)
    1 large egg
    3 tbsp unsalted butter, melted and cooled slightly
    2 tsp pur vanilla extract
    2 ripe bananas, cut into 1/2 inch
    1 1/2 c. blueberries, strawberries, or mixed berries

Directions

Preheat oven to 375 degrees F.

Butter an 8 inch baking dish and set aside.

In a medium bowl, mix together the oats, half the almonds, sugar, baking powder, cinnamon, and salt.

In another bowl, whisk together the milk, egg, butter, and vanilla.

Arrange the bananas in a single layer on the bottom of the baking dish. Sprinkle 2/3 of the berries over the bananas then top with the oast mixture, taking care to cover the fruit completely and evenly. Slowly pour the milk mixture over the oats and then give the dish a few thwacks on the counter to release any air bubbles and to ensure the milk gets between all the oats.

Scatter the remaining berries and almonds across teh top. Bake for 35-45 minutes.
