Ingredients

1 Brown Onion
4 Large Zucchinis (8 cups cut into pieces)
2 Medium Potatoes
4 cubes or tsp Chicken or vegetable bouillon
8 cups water
1/2 to 1 tbs Herbes de Provences
1 tsp black peppper
1 tsp fresh thyme
Tips
Vegetable bouillon can be substituted for the chicken bouillon.
1 small Tbsp of cream can be added to each serving just before eating
Directions
Chop and brown onion
Cut Zucchini and potatoes in small pieces and add to onions.
Cover with 8 cups of water
Add bouillon and spices. Add spices if needed.
Bring to a boil, reduce heat to low and cover. Simmer for 1 hour or until vegetables are tender.
If desired, blend soup to creamy texture.
Serving Size: 8
