Ingredients

    2 carrots, sliced
    2-3 stalks celery, chopped
    2-3 cups potato, pared and cut into 1/4-in. cubes
    1 medium onion, chopped
    1 can of diced tomatoes
    10 oz. package of frozen mixed vegetables
    2-3 cups water
    2-3 beef bouillon cubes (to taste)
    3-4 black peppercorns
    1 lb. stew beef

Directions

Add all of the ingredients to the crock pot, placing the vegetables on the bottom and side and the meat in the middle. Cook on low heat for 8-10 hours. Stir before serving.

Makes 7-8 servings, of about 1.5 cup size.

    I left out the frozen mixed vegetables, and put in a packet of onion soup... thickened it iwth cornstarch. It was delish! - 3/14/10

    Good
    I made this for my family but there was no need to add so much water.. I had to remove a lot of access water and thicken up the sauce for it to be classified as stew.... nonetheless it was enjoyed b all and everyone went for seconds! - 2/3/08
