Introduction

I adapted the BHG recipe to make a high protein, low sugar treat to put in my daughter's lunch. She thinks they're cupcakes and who am I to tell her they aren't? Number of Servings: 12

Ingredients

    2 scoops Pure Protein powder
    1 1/4 c flour
    1/3 c xylitol
    2 tsp baking powder
    1/4 tsp salt
    1 egg, beaten
    3/4 c skim milk
    1/4 c cunsweetened applesauce

Directions

Preheat oven to 400.

Blend dry ingredients together in a big bowl. Whisk wet ingredients together in a smaller bowl. Fold wet ingredients into dry ingredients. Pour batter into muffin cups. Bake 15 minutes or until toothpick comes out clean.

Serving Size: Makes 12 good sized muffins
