Introduction

Well it says boiled dinner, but I cook in a crock pot and it seems to work just fine. And I know it's not low fat, but since I only eat it once or twice a year, I consider it a great treat. Well it says boiled dinner, but I cook in a crock pot and it seems to work just fine. And I know it's not low fat, but since I only eat it once or twice a year, I consider it a great treat.
Number of Servings: 12

Ingredients

    4 lb corned beef brisket
    2 potatoes
    2 parsnips
    3 carrots
    1 turnip
    1 onion
    1/2 head cabbage

Directions

Peel and quarter (or cut into chunks) potatoes, turnip, parsnips and carrots, and place in bottom of crock pot. Slice onion lengthwise, and place on top of root vegetables. Place prepared corned beef brisket on top, and cook in crock pot on high for at least 8 hours (or on low for 12 to 18 hours). I add the cabbage towards the end of the cooking time, but you could add it earlier if you wanted to.

Serving Size: 12 servings, app 3 oz cooked meat and 1 cup of vegetables
