Ingredients

    Paste
    Sesame Oil, 1 1tsp
    *Peter Pan Peanut Butter, 0.5 tbsp
    *chopped green chillies, 1 oz
    *Fish Sauce, 0.5 tbsp
    Garlic, 1 clove
    Coconut cream lite, one can

    *Bok Choy, raw-shreaded, 4 bunches
    Green Peppers (bell peppers), 1 cup, cut in chunks
    Peppers, sweet, red, raw, sliced, 1 cup cut in chunks
    Chicken Breast, no skin, 1kg cut into small cubes

Tips

You can serve over rice or noodles but you would have to add more Calories.


Directions

put all the paste ingredients along with a couple of tablespoons of coconut cream in blender and blend until almost smooth. Pour into hot non-stick pan or wok and cook until boiling. Add remaining coconut cream and bring to rapid boil. Add chopped chicken and cook until chicken is done. Pile chopped veggies on top and cover cook for about 3 mins. Serve straight away.
