Ingredients

    2 cups red lentils
    1 can cubed tomatoes
    0.25 cup coconut milk
    1 tsps minced garlic
    1 inch of ginger root - grated
    2 tbsp canola oil
    2 tsp curry powder
    1/2 tsp dry chili flakes
    2 cups water
    1 tsp salt
    1 cinnamon stick
    1 bay leaf
    freshly ground pepper

Tips

Can be served wtih brown rice for an extra-satiating sensation, but try it alone without the added calories, and you'll see how fantastic this is!!


Directions

1) Mix the oil, garlic, giger, curry, chili together and put in microwave for 30 seconds
2) throw the flavoured oil into the slow cooker with all the other ingredients
3) close lid well, adjust slow cooker to high for about 1.5-2 hours, or until it boils and then put on low to simmer for 3 hours

Serving Size: makes 8 HUGE servings!
