    7 portabella mushroom caps
    1 lb. turkey sausage (browned)
    1 medium green pepper (chopped)
    1/2 medium onion (chopped)
    1 clove minced garlic
    2 tsp. lemon juice
    2tbsp. light soy sauce
    2 tsp. olive oil
    1/4 tsp chili powder
    1/4 cup italian seasoned bread crumbs
    4 tbsp chicken stock low sodium
    1/2 c. mozerella cheese reduced fat


remove the stems and gills from mushroom caps. wash tops off of caps lightly. in a small bowl combine 1 tsp. of olive oil, lemon juice and soy sauce. bast the mushroom cap with this and place on grill for 5 mins on each side or until tender.
in a skillet saute green peppers onions and garlic with remaining basting sauce from caps, and 1 tsp. of olive oil and chili powder
when tender add already browned sausage, bread crumbs slowly add chicken stock until crumbly and moist.
place about 1/4 c. of sausage mixture in each cap spinkle with cheese place in oven on baking sheet at 250
until cheese melts cool and serve.
1 cap per serving.

    This was AWESOME. I have to do dairy free, so I made 1/2 of the batch with tofu cream cheese, and 1/2 with mozz for my hubby. This smelled awesome, tasted great, and looks fantastic! - 7/25/10

    I did not have lemon juice, green pepper or chicken I subbed with beef stock and cut up some jar roasted red peppers...I added a slice of pepper jack cheese on top of the other cheese...hubby gave it a 4.99%
