Ingredients

    2 c water, 1/2 c almonds, and 1 medium apple, blended until smooth

    2 tbs vinegar
    3/4 c sugar
    3 c whole wheat flour
    1/2 tsp salt
    4 tsp baking powder
    1 c chopped or blended in cherries (pitted)

Tips

I make this in my blendtec. I blend together the first 5 ingredients, then add the flour, salt, and baking powder and blend again. Finally I scrape down the flour stuck to the sides of the mixer, add the cherries, and blend again.


Directions

Pour into nonstick mini-muffin baking sheet

Cook:
350 for 18 min

Serving Size: Makes 48 mini muffins
