Ingredients

    1/4 C Sugar
    1 tsp. pwd. Cinnamon
    3/4 C. Butter
    1 Cup Gran Sugar
    2 TBLS NuStevia (NuStevia is a powdered non-sugar sweetener )
    (OR a total of 3 Cups Sugar and no NuStevia)
    (This will, however, increase the carbs, sugar & Calorie values)
    3 Eggs
    6 Very Ripe mashed Bananas
    1 16-oz Container Sour Cream
    2 tsp Vanilla Extract
    1 TBS Ground Cinnamon
    1/2 tsp Salt
    3 tsp Baking Soda
    4 1/2 C all-purpose Flour
    1 C Chopped nuts (optional)

Directions

Preheat oven to 350 degrees. Grease four 7"X3" loaf pans or three 8" X 4" loaf pans. In small bowl, combine 1/4 cup Sugar with 1 tsp Cinnamon. Dust greased pans lightly with this mixuture.

In large bowl cream together the butter, Stevia & sugar (or just 3 Cups Sugar and no NuStevia), add eggs, mashed bananas, sour cream, vanilla and cinnamon. Beat well, then add flour, salt and baking soda. Then fold in nuts. Divide into prepared pans. Dust top of pans with remaining sugar & cinnamon mixture. Bake for 1 hour, until toothpick inserted in center comes out clean. Makes 57 1/2" slices that can be cut in half.

    O.K.
    I used smaller containers, so the recipe was ready in less than 50 minutes. I found it very sweet, and would recommend reducing the stevia by .5 tbsp. I used fat-free sour cream and whole wheat flour. - 3/17/20
