Number of Servings: 4


    1 15 oz can diced tomatoes with green chiles (or 1 can diced tomatoes plus 1 jalapeno)
    1 10-oz package frozen chopped spinach
    1-3/4 c cooked chickpeas (or 1 15 oz can chickpeas, drained and rinsed)
    1/2 c water
    1 Tbsp minced garlic
    2 tsp mild curry
    1/3 c unsweetened coconut
    1/2 tsp salt (or to taste)


In a large saucepan, combine all ingredients. Bring to a boil over high heat, then cover and cook over medium heat for 5 minutes.
Break up the block of spinach with a fork, cover, and continue cooking until the spinach is cooked, about 5 more minutes. Stir well before serving.

Serving Size: Makes 3 servings
