Ingredients

    1 box of pasta (I prefer rotini)
    1 large can crushed tomatoes
    2 cloves garlic-diced
    1 poly-bag meatless crumbles
    1 medium onion, diced
    1 box frozen spinach
    3 tbsp olive oil
    grated parmesan cheese
    1 tsp oregano
    1 tsp salt
    1 tsp fresh ground black pepper

Directions

cook rotini according to directions
In large frying pan, heat 3 tablespoons olive oil to med heat, add onions and garlic
simmer for 1 minute, add spinach
simmer for 1 minute, stirring
add recipe crumbles, cook for 1 minute, stirring
add crushed tomatoes, oregano, salt and pepper
simmer for 10 minutes
place cooked rotini n baking dish
stir sauce mixture over Rotini, bake at 350 for 1/2 hour
serve with fresh grated parmesan at the table (calories allow for 1 tbsp per serving)

    great recipe! so funny because i just went out and bought meatless ground meat, frozen spinach and some sliced portabello mushrooms. didn't know what to do with it yet, until i found this. delicious. - 4/21/08
