Introduction

Ingredients

    5 Potatoes (with skin)
    5 Pork Sausage Patties (or can use 1 lb. of pork sausage)
    6 Eggs
    Canola Oil

Directions

Cut potatoes into small chunks and fry in canola oil. In another skillet, fry and chop up sausage patties, drain grease. Mix eggs in with sausage and fry together in same skillet until thoroughly cooked through. Add sausage and egg mixture to fried eggs.

Tastes good with salt and pepper, ketchup, or salsa.

    This was really good. I did add half an onion and put cheese on the side. Drop the cheese on top 'while it's steaming hot and it seeps in perfectly. Yum! Next time I'll make it with steak. - 12/5/10

    Very good. Made for dinner last night and everyone loved it, except my five year old son.............he didn't like the skins on the potatoes, but ate the rest!! How do get the potatoes fried in the canola oil without them sticking so badly to the bottom of the pan? We'll definitely make again! - 3/18/09
