Ingredients

    1 1/4 C Flour
    2 tsp Baking Powder
    2/3 tsp salt
    1 tbsp White Sugar
    1 C Milk
    2 Egg yolks beaten
    4 tbsp vegetable oil
    2 egg whites beaten

Directions

1. Combine all dry ingredients in large bowl
2. Separate yolk from egg white and combine yolk with milk and oil in separate bowl from dry ingredients. Set egg white aside in large mixing bowl.
3 Mix wet ingredient well and combine with dry ingredients.
4. Beat egg whites until soft peaks form
5. FOLD in gently the egg whites to dry ingredients DO NOT WISK--stir ONLY until blended
6. Using 1/2 C measuring cup, pour onto hot skillet and cook until golden brown and when centre is touched, it springs back.
