Ingredients

    1 1/2 cup sugar
    1/2 cup butter
    1 tsp vanilla
    2 eggs
    2 ounces red food coloring
    2 Tbsp cocoa
    2 1/2 cup flour
    1 tsp salt
    1 cup buttermilk
    1 tsp soda
    1 Tbsp vinegar

    Icing
    1 stick butter
    1 8 ounce cream cheese, 1/3 less fat
    2 tsp vanilla
    1 pound confectioners sugar

Directions

Cream sugar, butter and vanilla. Add eggs, one at a time. Make a paste of the red food coloring and the cocoa. Add sugar mixture and blend. Sift flour and salt. Add flour and buttermilk alternately. Beat well. Combine vinegar and soda, add to batter. Bake in 8 inch layer pans (2) at 350 degrees for 30 minutes.

Serving Size: Makes 36-1/2 inch pieces of two layer cake
