Ingredients

    4 Scallions - roughly chopped
    2.5 cm/1 inch piece of fresh root ginger, peeled and chopped
    1 lemon grass (citronella) stalk, finely chopped
    3 tbsp chopped cilantro (coriander leaves)
    2 garlic cloves, roughly chopped
    1/2 tbsp light soy sauce
    150 g /5 oz) tofu drained
    40 g (1.5 oz) breadcrumbs
    1 egg
    1 tbsp olive oil, for brushing
    black pepper

Directions

Serves 2.

1) Place the scallions (spring onions *UK*), ginger, citronella (lemon grass *UK*) and garlic in a food processor and process lightly until mixed together and chopped, but still quite chunky.

2) Add the soy sauce, tofu, breadcrumbs, egg and black pepper and process until just combined.

3) Take 3 dessertspoonfuls of the mixture and pat into flat cakes, using wet hands. Place on a lightly greased grill pan (skillet), brush with a little oil and grill (broil) and under preheated hot grill for 2-3 minutes on each side until golden.
