Introduction

Ingredients

    2x28oz cans of organic, diced tomatoes
    2cups organic vegetable broth
    1Tbsp extra virgin olive oil
    1 medium onion, chopped
    2 cloves crushed garlic
    Basil, fresh, chopped
    1/4tsp freshly ground pepper
    1/4tsp salt

    1cup organic coconut milk

    1.5cups (cooked) brown rice

Tips

Use low sodium & organic products whenever possible.


Directions

Saute onion & garlic in olive oil. Add to tomatoes & broth in slow cooker. Turn cooker on Warm (lowest setting). Let warm for 4hrs. Add chopped basil & let simmer until basil is well wilted. Blend soup IN cooker with immersion blender. Add coconut milk & cooked rice, stir. Let warm for approx 10 minutes. Serve.

Serving Size: Makes 6 1.5 cup servings
