Ingredients

    1 tbsp whole-wheat pastry flour
    2 tbsp yellow cornmeal
    1 tbsp applesauce, unsweetened
    1 tbsp + 1 tsp (4 tsp) unsweetened almond milk, plus 5 drops lemon juice
    1/8 tsp salt
    1/4 tsp baking powder
    1 packet stevia

    **note: the 2nd picture is a variation that includes 1 tbsp canned (no salt added) corn. A delicious 2nd option!

Directions

Mix all ingredients (first dry, then combine milk/lemon separately and add in wet) and microwave for 1 1/2 minutes (90 seconds).

Serving Size: makes 1 cornbread muffin
