Ingredients

1 c butter or coconut oil
1 1/2 c white sugar or confectioners sugar
    2 eggs
    1 tspp vanilla extract
1 c yogurt or sour cream
    5 c cookie flour mix
    2 tsps baking powder
    1 tsp xanthan gum
    1 tsp cream of tartar
    1/2 tsp salt
    1/2 tsp nutmeg

Tips

Add 1 tsp xantham gum to flour mix before adding flour to cookie mix

Directions

Preheat oven to 350. In a large bowl, cream together the coconut oil (butter may be substituted) and sugar. Beat in the eggs, vanilla and yogurt. In a separate bowl, combine the flour, baking powder, salt, cream of tartar, xantham gum and nutmeg. Stir into the creamed mixture just until blended. Dough will be light and sticky. Cover or wrap dough and chill overnight. On a lightly floured surfae, roll the dough to 1/8" thickness. Cut into desired shapes using cookie cutters. Place cookies one inch apart onto ungreased cookie sheets. Bake in the preheated oven for 8 to 10 minutes until cookies turn a very light brown. Let cool. Decorate as desired. Every year I make these ahead and let my grandchildren help decorate. My own children have fond memories of decorating these cookies and ask me to make them every year.
