Introduction

I put this together after trying to find 4HB (slow-carb) approved recipes. Although the original recipe calls for cottage cheese, I didn't have any so I replaced with feta cheese. Number of Servings: 6

Ingredients

    8 fresh eggs
    1 cup onion, chopped
    2 cups spinach
    1 cup red peppers, chopped
    1 oz. feta cheese
    1 clove garlic, minced
    1 tbsp olive oil
    salt and pepper, to taste

Tips

If you are following the 4HB diet, serve with a side of beans. Enjoy!


Directions

Preheat oven to 325 degrees. Grease a 9x9 clear pie pan. Beat eggs in a bowl and set aside. In a saucepan over medium-high heat, throw in garlic, onion, and pepper until slightly tender. Throw in spinach and cook until slightly wilted (only takes a minute or two!). Remove pan from heat. Combine eggs, feta, and veggie mix in the saucepan and transfer to pie pan. Add salt and pepper to taste. Cook in oven at 325 degrees for about an hour, or until eggs set.

Serving Size: makes 6 "slices"
