Introduction

Ingredients

    3 C Pumpkin (puree/mashed)
    1/2 C 10% Cream
    100 gram Marble No Name Cheese
    1-2 Chives - finely chopped
    5 Eggs - separated
    Spices (I used pumpkin spice, nutmeg and Epicure No salt Pepper and lime)

Tips

You can make it lighter - substitue the cream for 1% Milk...


Directions

Prep the squash or pumpkin. Mix the pumpkin, cream, and spice. Add the egg yolks and whisk together. Fold in cheese and chives.
In a separate bowl, whisk the egg whites until stiff peaks form but still moist.
Add to the pumpkin mix 1/3 at the time.
Scrape into a souffle dish (8X12) and bake at 400F for 40min.
Make 8 servings.
