Introduction

Ingredients

    0.5 cup dry quinoa
    1 cup vegetable broth
    1 red pepper, chopped
    2 cloves garlic, diced
    1 small bunch fresh cilantro, chopped
    3 green onions, chopped
    1 can black beans, rinsed
    Juice from half of a lime
    Dash of dry chipotle chile pepper
    1 avocado, chopped

Directions

1. Place quinoa and vegetable broth in a 2 quart saucepan. Heat to boiling, then cover and turn heat to low. Simmer for 15 minutes.
2. While quinoa cooks, prep veggies and beans.
3. Heat oil in pan. Sautee garlic and pepper for a minute, just long enough to enhance the garlic and soften the pepper a bit.
4. Mix everything except avocado well. Add avocado as a garnish as needed (don't add to leftovers, it'll get brown very quickly).

Serving Size: Makes 3 generous dinner portions, or several side dish
