Ingredients

    1 Medium Fresh Egg
    1 TBSP liquid Egg Whites
    1 TBSP Red Bell Pepper, diced
    1/2 TBSP diced red onion
    1 Cherry tomato, diced
    1 Slice Sargento Colby-Pepper Jack Cheese
    1 TBSP Pea Guacamole
    1TBSP Light Sour Cream

Directions

Heat a small skillet sprayed with non-stick spray over medium low. Mix egg and egg white together and put in heated skillet. Cover with lid and cook for 3 minutes.

Meanwhile in a small bowl microwave diced vegetables for 1 minute.

Carefully flip Egg "crust". Cover crust in pea guacamole, then put on diced veggies and cover with cheese. Cover skillet with lid and cook for another 1-2 minutes, or until cheese is melted.

Remove "pizza" and dallop with sour cream.

Enjoy!!
