Introduction

This is a mexican twist on lasagna This is a mexican twist on lasagna
Number of Servings: 12

Ingredients

    1 lb. lean ground beef
    1 can Ranch Style black beans
    1 can Campbell's Cream of Chicken Soup 98% fat free
    1 can Ro-Tel Original
    5-6 Mission 8" Low Carb Sof Taco Size Tortillas

Directions

-Brown the ground beef; drain excess grease
-Layer bottom of microwave safe dish with 2-3 tortillas.
-Pour ground beef over tortillas
-Drain beans; pour them over the ground beef and spread evenly.
-Place another layer of tortillas over the beef and beans.
-Spread an even layer of the soup on the top of the tortillas.
-Pour the whole can of Ro-Tel over the soup (Do not drain)

Put Saran wrap to cover dish. Place in microwave and cook on high about 7-8 min. (You can also cook this in the oven at 350 degrees for about 20-25 min. )

We usually eat this with Spanish rice
