Ingredients

    1 med. onion chopped
    1 med. bell pepper chopped
    1 celery rib chopped
    1 garlic clove minced
    6 tablespoons margarine
    1 can condensed cream of mushroom soup (98% fat free)
    1 lb. shrimp tails removed
    1-1/2 cups cooked rice
    2 cans crabmeat (6 oz each)
    4 slices day-old bread
    3/4 cup skim milk
    salt and pepper to taste

    *If you want you can add a cajun or Old Bay seasoning blend to give it more flavor

Directions

In a large skillet saute onion, peppers, celery, and garlic in margarine until tender. Add soup and shrimp. Cook and stir over medium heat until all ingredients are blended (if you used raw shrimp, cook until shrimp is no longer pink). Stir in rice, bread cubes, milk, and seasonings. Spoon into a greased 2 qt. baking dish. Baked uncovered or until heated through at 375. (25-30 minutes).
