Ingredients

    2 Tbl Olive Oil
    3/4 Yellow Onion, minced
    4.5 cloves Garlic, minced
    24 oz. Diced tomatoes
    1 Tbl Chili Powder
    1.25 Jalapeno, diced
    2 quarts Beef Stock
    1/4 Tbl Oregano, dried
    1/3 tsp Cayenne Pepper
    1/2 cup Rice
    Salt
    Pepper

    MEATBALLS
    1 lb. Ground Beef
    1 lb. Ground Pork
    1/4 cup Zucchini, shredded
    1/4 cup Carrots, shredded
    1.5 cloves Garlic, minced
    1/4 cup Rice
    1 1/2 Tbl Parsley
    Salt
    Pepper
    1/2 tsp Oregano, dried
    1 Egg
    1/3 Yellow Onion, minced


Directions

Saute onion and garlic in oil then puree tomatoes and add to onion mixture along with beef stock

Add chili powder, oregano, salt, pepper and jalapeno and bring to boil

To make meatballs, mix together all ingredients and form into 1" meatballs

Drop meatballs into boiling soup, cover and cook for 10 minutes, sprinkle in rice then cook and additional 20 minutes.
