    1 medium onion, chopped
    1 clove garlic
    1 cup mushrooms, quartered
    1 small eggplant, peeled and cubed
    1 medium carrot, cut into bite-sized half-moons
    1 cup dry lentils
    1 cup dry brown rice
    2 cups vegetable stock
    2 cups water
    1 15 oz. can of tomato sauce
    1 tsp oregano
    1 tsp italian seasoning
    salt and pepper to taste


Saute the vegetables lightly in a frypan and then place all ingredients into crock pot. Cook on high for 3-4 hours or on low for 8-10.
