Ingredients

    3 apples, peeled, cored and sliced
    75g butter
    2 eggs
    2 tbsp golden syrup (or maple syrup)
    1 cup sugar
    2 cups plain flour
    2 tsp baking soda
    3 tsp mixed spice

Directions

Melt butter. Add eggs, golden syrup and sugar and mix. Sift in flour, mixed spice and baking soda and add apple. Stir until combined. Bake at 180 degrees C (170degrees if fanbake) in 20cm square tin for 35-50min until skewer inserted in centre comes out clean. Can be served warm or cold, plain or with yoghurt.
